Sour Blueberry Gummies Recipe

Are you looking for a snack that supports your health?  You can’t beat these sour gummies!  They’re packed with gut healing gelatin and they taste delicious.  Gelatin contains two amino acids that we typically don’t get a lot of in our modern diets.  These amino acids are glycine and proline, and they come from parts of animals that we don’t really eat anymore, such as the bones and organs.  If you’re like me (read my story here) and you’re struggling with symptoms, gelatin can help heal your gut, which is key to healing your body!

You’ll quickly learn that I’m not a big recipe developer.  I’m the kind of person that throws together whatever I have in the house to make something quick and edible.  I do base my homemade “non-recipes” on real, tried and true recipes that I look at for reference beforehand.  So, I promise to always include a link to the recipe that I branched off of just in case you want to check out the original!

For these gummies, I used this recipe.  You’ll notice that I changed a few things.  It’s summer, and I’ve got a yard full of wild blueberries!  I wanted to make good use of them, so I swapped out the fruit in the recipe for the blueberries that I already had on hand.  Speaking of what I had on hand, I only had 4 small lemons, which gave me about ¼ cup juice.  Instead of fretting about not having enough lemon juice, I just added water to give me the right amount of liquid.  Finally, when it comes to gummies, I like them sour.  I cut the amount of honey in the recipe to give just enough to keep them sour, but not overwhelming.  You can make swaps for whatever fruit and liquid you have on hand, too!  Just try to keep the same amounts of each type of ingredient.

Sour Blueberry Gummies:

Prep Time: 5 minutes
Cook Time: 5-10 minutes, plus 1 hour refrigeration
Total Time: 75 minutes (15 minutes active)
Servings: 24 pieces

1 Cup wild blueberries
¼ Cup fresh squeezed lemon juice (about 4 small lemons)
½ Cup filtered water
¼ Cup gelatin (I used this brand)
1 Tbsp raw honey

Blend blueberries, lemon juice, and water in a blender and blend well
Pour blended fruit and liquid into a small saucepan and add honey and gelatin
* TIP * Sprinkle gelatin over the top of the liquid slowly so that it all has a chance to dissolve and dampen with the liquid.  If you dump the whole amount at once, you run the risk of having chunks of gelatin that are unsaturated and can produce dense, chewy pieces in your gummies

Mix well to combine
Place saucepan over low heat and gently whisk the mixture
Continue to heat mixture and gently whisk for 5-10 minutes or until it thins out and all gelatin is dissolved
Pour mixture into silicone molds of your choice or into a small baking dish
Refrigerate for at least 1 hour and enjoy!
